I'm making one up on the spot.

I got some ancho chillies the other day and have done them with some roasted garlic, ginger, padron peppers and onion. A bit of coriander too. Can't wait to see how it turns out.

I sprinkle garlic granules on everything and it’s not technically a condiment. Does this count?

I make chilli jam, caramalised onion chutney and piccalilli.

I tried tomato sauce the other week but I didn't use it as sauce as it was a bit weird so I used it in cooking instead.

I love condiments

Apple butter, smoked salt, dehydrated tomatoes, flavoured butters. Smoked butter is on the to do list.

I'm always tinkering about with food, so I grow and dry a lot of my own herbs and spices too

Once in a while, but there's been a lot of work gone into the ones you can buy. They take a bit of beating.

I more tend to enhance existing ones (bit of garlic and mustard into mayo etc.)

Probably doesn't count, but I have to have my own homemade pickled onions.

I make a killer garlic and black pepper steak marinade and my chilli jam is pretty fucking awesome.
