Another vote for the scores of Ennio Morricone

He’s done so many memorable ones over the years including the aforementioned trilogy, Once Upon A Time In The West, The Mission and The Professional (the last one particularly beautiful).

John Barry is another of my faves to with a plethora of amazing scores to his name.
