All the recipes I've seen say put sultanas in. I dislike them intensely. I wondered if they're a requirement for thickening or something

I would have thought they add sweetness. You could add more tomatoes to make it thicker I think.

It will be for natural sweetness, add some honey instead- it will take the edge off the acid produced from the tomatoes. Do you like apricots? You could add a few chopped dried apricots instead?

I'm not a big fan of fruit in chutney at all. I don't mind apples though, I wonder if they would work.

thanks I will leave the sultanas out then. I'm sitting in the garden with my coffee looking at hundreds of green tomatoes thinking I really should do something with these.

They’re not intrinsic to the recipe as I understand it although even if present, you won’t specifically be able to deduce their taste in amongst all the other ingredients (unless of course, you are blessed with John Terode’s exemplary and ostensibly superhuman taste buds!)

Remember that chutneys are cooked slowly, for a longer time than pickles and subsequently have that more ‘well done’ taste.

Apples will make it really thick due to the pectin but you could give it a go but I wouldn't add much personally

I quite often make red tomato chutney and really enjoy that. This year I've given most of the surplus red away or made sauce and frozen it. I've never had such a large quantity of green before.

Its not so much the taste of sultanas but the consistency

I tried my (admittedly woefully inept) culinary hand at a homemade Piccalilli a few months ago. Actually, I surprised myself as it was very nice but - I swear my kitchen STILL after all this time bears the reminiscent stench of the vinegar

You can't put ' no sultanas' on your profile as it's against the Race Relations Act. You will get messages from angry Sultans.
