Absolutely, hands down, the single most beautiful thing ever recorded is This Mortal Coil’s cover of Song to the Siren. If you don’t know it, have a listen on YouTube. It’s just stunning.

A few others off the top of my head:
Tori Amos - Angie
Calum Scott - Dancing on My Own
Bjork - It’s Oh So Quiet
Bruce Springsteen - Because the Night
Always on My Mind - Pet Shop Boys |

Actually...
Bad Wolves - Zombie
The day Dolores O'Riorden (singer in the Cranberries) was supposed to record her vocals on this track. She died of drowning due to alcohol intoxication. Very sad! |

I'm currently OBSESSED with this instrumental cover of Tears for Fears 'everybody wants to rule the world'. It's just so perfect and uplifting. And that lap steel harmonising is just... Mmmmmmmm

"Running up that hill - placebo"
Love that. The Molko’s voice is just lush.
Another Kate Bush cover that I love - it can’t compare to her original but by golly it’s good fun.. China Drum - Wuthering Heights |

Gonna sound weird, but a US band called NinjaSexParty have released a couple of albums called "Under the Covers" where they cover their favourite songs.
From those albums, my favourite cover songs are:
Limelight (originally Rush) and Elton John's Rocket Man |

"Johnny Cash - Hurt
Best cover ever"
Coming late to this thread I just knew someone would have nominated this - it's in a class of its own (and always makes me cry).
Thirty Seconds to Mars' version of Lady Gaga's 'Bad Romance' is well worth a listen too. |
