I’m cooking you lunch…

Someone offered to cook for me this week as I have a couple of days being completely home alone. 🫣😰 I can get myself to the kitchen now and prepare simple stuff etc, but an offer to be cooked and fed is too tempting! It didn’t materialise but whatever. I wondered about the menu and it wasn’t imaginative or tantalising anyway
If I were to cook you lunch, and assuming there aren’t any allergies, dietary restrictions or food preferences, I would delve into my heritage obviously and come up with something like:
Empanadas de picadillo con ensalada verde y queso fresco. (Think Mexican cornish pasty with salad and fresh cheese 🤭) lighter than a cornish pasty though!
Or- some enchiladas - with green sauce which is so uncommon here. Or enchiladas queretanas for the veggies which are right from my neck of the woods!
For afters- If time to prep beforehand, a pastel imposible. If not, then some churros with real Mexican (or Spanish, to choose) hot chocolate. Or arroz con leche.
If we’re talking something more mainstream though I make an amazing lasagna. and a tiramisu for afters.

Honestly you can ask my kids when I say do you want toast for breakfast they ask who is making it.
Whan I was growing up my mother gave up after having to repaint the kitchen for the 3rd time.

Beef Wellington is delicious. It’s all in the duxelle lining.

Italian flair hearty and indulgent:
Pappardelle al ragù bianco – thick ribbons of pasta coated in a slow-cooked white meat sauce with white wine, rosemary, and a touch of cream. Simple yet deeply flavorful. Served with a side of focaccia barese, crisp on the outside, fluffy inside, and dotted with tomatoes and olives.
For afters – a proper panna cotta with fresh berries and a drizzle of honey. 🍯
Or, if we’re feeling less fancy and extra indulgent, a homemade cannolo siciliano, crisp pastry shell filled with sweet ricotta, orange zest, and chocolate shavings.

Who here can make an amazing jollof rice? I fancy some.
My son has made it a couple of times but I am pretty sure it’s not on point yet haha (just don’t tell him I said this) I’ve never eaten any made by anyone else so don’t know!

Meat? Beef? Minced, cut into very small pieces? This sounds very interesting though I am not a fan of creamy sauces…

I'm a hispanophile in lots of things but sorry OP I've never dug the cuisine. Perhaps as a veggie it's too meat based? 🤷♂️
If I was cooking for someone it might be a light starter like pea and mint soup, mains of creamy potato dauphinois with fresh green veg and a Mediterranean Salad, then a classic English pud to close. |

I am not Spanish. LatAm cuisine is miles away from Spanish, completely unrelated! But empanadas and enchiladas can be made veggie no bother. I am a self confessed carnivore though
