If you read Escoffier and Brillat-Savarin - even the Roux brothers and Heston Blumenthal - you'll discover crisps should always be the side dish. The sandwich (ideally a Reuben, but needs must if prawn mayo is the only thing available) of a true gourmand is served with Wotsits.
