When you stop and really think about it, pies are blooming glorious are they not?

Pork pies, steak and kidney pies, chicken and mushroom pies……..pies

Frey Bentos mince beef and onion was a guilty pleasure but a steak and ale pie is my favourite, especially Piglets pies served at the Amex Stadium Brighton.

Cornish Pasty a close second if that qualifies.

With all my ramblings about steak, I would expect it to be steak pie. It's up there but alas no my favourite is Chicken and Mushroom with a nice creamy sauce.

I like them deep-filled with a pastry that is not greasy but with a little crunch followed by a melt in the mouth texture.

My late partner and I used to make raised pork pies from scratch. Hugh Fearnley Whittingstall has a recipe in his book "Meat". Hot water crust pastry is a joy. I have a pie dolly somewhere.
