Funnily enough I was planning Simon Hopkinson's aubergines with ginger, soy & chilli tonight (https://www.countrylife.co.uk/food-drink/aubergines-with-ginger-spring-onion-and-chilli-151494 for one version). Feels an appropriate dish as the evenings start to get a bit nippy.

I realise for extra Fab points I should suggest the ginger could be used for figging, but beyond the availability of a suitable participant, I'm aware the ginger presently in my fridge doesn't have the requisite girth.
