My dad's goto late night snack was curried Bacon sandwich.

Just sprinkle some curry powder over the bacon as you cook it.

That might suit the OP but I don't do bacon at home. Not sure what its fridge life is and it doesn't microwave well.

This is something that both really puzzles and simultaneously irks me; why don’t cafes and eating establishments such as Greggs etc serve bacon sarnies all day?

There is surely a big demand.
