It certainly could have gone awfully awry with such an overwhelming flavour as Stilton added but thankfully it was strategically subtle and added a sort of welcome ‘twang’ for want of a much better description |

I brought it from a local butchers. They do some really experimental combinations in their pies (as well as more traditional).
Best of all though, they really fill the pies to the maximum capacity |

yes pies can be really good or the exact opposite, i used to go to a pie restaurant in Weymouth its closed down now mind  |
