I made a Battenburg cheesecake a couple of months ago. Made the biscuit base, then sliced a Battenburg into 10 slices and lined the inside of a cake tin with them. Made the cheesecake filling in pink and yellow, then layered them in the tin, freezing each layer for 20 mins before adding the next - 2 layers of each colour - before adding a marzipan topping.
It went down very well with the ladies in the office! |
