Love it! Accidentally, we had pork belly slices for dinner last night, cooked slowly with some onions, peppers and mushrooms, and with a splash of port added towards the end. It works ever so well with a dollop of mash and some sauerkraut or other pickels.

Love the smell, love the taste of pork in general.....can't stand belly pork. I just can't get away with fatty meats, it's the texture of fat - it knocks me sick.

Slow cook and a lot of the fat will disappear. Makes what's left incredibly tender and juicy.
