Fried with runny yolks
I love to pop the yolks over whatever greasy accompaniment I’m having them with like a huge spot and watch that beautiful yellow ‘pus’ ooze out and cover it all.

I’m super fussy about eggs.
Heavy bottom frying pan with a lid. Put a little bit too much salted butter in the pan and about 1cm of boiling water.
Crack the eggs in. Lid on tight. Mid heat. Perfect egg with no snotty white in about 3 minutes. Left eggs out with a slotted spoon and Shake off any excess water.
Sourdough toast and lots of pepper.
