Big question that, and really depends on what you are looking for.
There are two main areas that attract the weekend party crowd (Concert Square and Matthew Street) with fairly standard pubs and clubs (plus a few hidden gems in there).
There are plenty of good boozers with real / craft ales. Some decent tours of these around Hope Street and Hardman street areas, but there are others.
There's some nice cocktail lounges / wine bars mixed in with restaurants - Castle Street area.
The Baltic area has a more hipster vibe. There are a couple of food halls with drinks (duke street, and Baltic)
And some straight up brewery pump houses in the dock estate which are cool too.

Agreed. Castle Street is a good bet and in easy distance from the Malmaison. Townhouse is good.
Ma Boyles, tucked away off a side street is decent for early drinks, especially on Friday. A few older boozers too - Corn market, Lady of Man, Rigbys.
Rox and McGuffie's for drinks. The Alchemist or Liverpool Gin are a bit swankier / insta ready.
Pho, Mowgli, Bacaro for nice eating. Rudy's for cheap eat.
