It's loads of fun, OP. If you look on Google there are lists of free things that go on in each of the various hotels on the strip. Caesar's Palace has a special, and somewhat unknown, tour they do of the behind-the-scenes upkeep in their giant fish tank. When we went we were the only ones who knew about the tour and it was awesome!
For buffets, is recommend the buffet at the Paris hotel. Go for a late lunch - that way you can catch the dinner food when it first starts coming out but without paying the dinner price.
Last time I went, the coca cola store had an around the world sampler it was doing and it was great fun and really interesting.
You can do the grand canyon, but it's a bit far by car if you're only spending a week. Try the helicopter rides. They are expensive but great for saving time and spectacular views.
For the old-time Vegas feel head downtown, away from the new stuff on the strip.

Last time I went to Vegas I came back with a husband
Apart from the strip with all the amazing hotels / casinos try & take in a show / resident artist usually reasonably priced too.
You're also near the Grand Canyon & the Hoover Dam which is worth a day trip
