"So trim with adjustable clippers and razor the balls? Sounds dangerous lol. Why isn't someone making a living out of these services, a down below barber so to speak "

I've done both and trimmed with shaved balls and perineum is my favoured approach I also trim my body hair a bit so it blends better.
Shaving your balls should be fine as long as they've tightened up. Slightly more awkward if they are hanging. I find getting them wet and putting shaving gel on them normally tightens them up |

They've only got nicked by a blade 2 or 3 times in 20 odd years of shaving them, so their fears are unfounded
