Its good to have things that you want to happen, but try not to force it. We've found that things are a lot better when you let them evolve naturally. When we've had meets the activities have happened over a lot longer period than a 1-1 on situation and this naturally means that there are times when 1 or more people may take a break. So there are often times when things like MMF and FFM almost occur naturally. Of course this is only our experience and it depends on how comfortable you are with things occurring whilst you're not in the room. I got into this when I went to a club that allowed single guys in.
