Not sure why you find this surprising OP? Many lie about their profiles. Have you ever met any of these couples? Are they a genuine couple currently, could they be just a male?
Others, the bi or non-straight males may not be hypocritical but pretending to be straight on purpose, as for some bi/gay a "still in the closet" inexperienced male could be more exciting than a declared experienced bi or gay.
And many more reasons, including some simply being hypocritical, as you suggested.
