"Looking for information on the restaurant and how it operates without buffet pm or reply if you know thanks"
Buffets/self service are not allowed so I would think they show a menu or offer a QR Code menu and take your order at the table.
You can take your masks off to eat and drink but must put them back on when going to and from the toilet for example.

For those interested here is a reply we got from the Caterina
"The restaurant buffet is still the same self service with scheduled turns, adding the plastic gloves to serve the food. The drinks stations are self service as well and the solarium is open  "
