Ribeye rare, so much so that a well trained vet could probably bring it back to life, chips, Diane sauce(or peppercorn) onion rings or caramelised onions.
Served with either a stout or a whisky
(failing that you can decide the cut and how rare it is as long as the rest stays the same and it's not well done)
..... And now I want a steak... |

Love a steak lovely and rare is best option with red wine sauce with shallots, mint potatoes a beafy tomato and mushrooms all drizzled with pepper

Fresh rump, slice the end off a clove of garlic, rub both sides of steak, sprinkle with salt, pepper and fresh parsley. Butter a ridged pan, throw steak on, sear for a couple of minutes, turn over and same on other side. Take steak out and wrap in foil to rest. Take a large lump of butter, gently melt. Grate the garlic used on the steak, chop more parsley then add to the butter, add a pinch of salt then heat gently to infuse the flavour. Quick set the butter in the fridge or freezer. Nice big ribeye plenty of salt and pepper then cooked over the hot embers of a campfire, the hotter the better so it chars the outside but is still very pink inside.
Some baby potatoes, asparagus then some wild chanterelle mushrooms done in the pan with some double cream
Most important thing is to let the steak rest for about 5 minutes. |

I will do my bit to save the cow by eating stake. If the veggies get there way it would mean no cows on farms other than milk production. Don't think they have thought there actions thru. Beef cows would not be seen other than the zoo. |

I’m not sufficiently up on steak to be able to name a cut. As for how it should be cooked, I like it medium rare - a little bit pink in the middle, but not so rare that it could be revived. |
