I’m on holiday in Fuertaventura, and found a cafe that had watermelon flavour ice cream... amazing in the heat!
Back home it’s an old classic, Mint Choc Chip, with Cookie Dough a modern and respectable runner up |

Tablet is easy.
120g butter melt in heavy pan. Add 200ml milk.
Add 1kg sugar heat slowly till all melted. Add 1 tin condensed milk.
Bring to slow boil, low rolling boil, should be white, continue for 20 mins, it will turn a browner colour (or 115c if you have a thermometer). Don't do it quicker than 20mins or it will be too pale.
Add vanilla essence, beat with mixer for 3 minutes, pour out in prepared lined pan, leave to cool, scrape all the bits off the pan and eat while waiting |
