Off the back of the signature dish thread, thought would be fun to share some recipes. I bloody love cooking but my skills are restricted to pastas, risottos and a mean cheese on toast.
Any suggestions for things I can try guys? |

My brother in law is a chef and gave me this recipe for a curry sauce. He didn't give quantities as he works in bulk, so alter the spices to your taste.
Onions
Peppers
Mushrooms
Veg oil
Cumin
Gara masala
Curry powder tikka
Garlic
Ginger
Chilli powder
Fresh coriander
Chopped tomatoes (I use 2 tins)
Sugar/sweetener
Tomato ketchup/purée
Veg or chicken stock
Sweat the onions, mushrooms & peppers with the spices
Add the tomatoes, stock and sweetener
Add diced meat of your choice (I use chicken)
Cook on a low heat for 20/30 mins or until ready

I still need to get the spices right as I like a bit of a kick. I started with a teaspoon of each and working my way up.
C cooks amazing meals but I've yet to taste any of them. But they look good!
I also make a great lasagne |

Yeah was going to say I'd probably start a teaspoon and gauge it from there.
Hmm I've not made lasagne in a while, I do a very nice Spag Bol though.
My problem is I rarely work from a recipe and tend to improvise |

Chicken chow mein
Slice chicken into thin strips
In a wok add about 1 cup of water and put on high heat.
Add your chicken for about 3 to 5 mins and then place into a bowl.
Tip some of the water away leaving just a covering in the bottom of your wok.
Add to this some seasoned oil (email me n I'll tell you how to do it).
Put around 2 to 3 tblespns of dark soya sauce and light soya sauce each.
Slice about 2 onions about 1cm slices put then into the wok turn your heat down to medium lightly cook.
Add a bag of bean sprouts.
Take a bunch of spring onions chop into 1cm pieces add to pan.
Put your chicken back into the wok.
Add some black n white pepper
Keep mixing all together.
Turn the heat up then serve n enjoy.

"The seasoned oil i always put in when I cook my onions. I use vegetable oil but I'll explain how to season it. Well worth it though for the flavour."
