So this year Im going to do parsnips for the very 1st time I've googled a few recipes but not sure yet what way I'm going to do them!

Cut into “fat chips” parboil for five minutes. Heat olive oil in a roasting dish and then add the parsnips with honey, sea salt and cracked black pepper. Chilli flakes or chopped nuts (I like hazelnuts but again your choice) are optional. Toss all together and roast in a fairly hot oven till they get that caramelised slightly charred look. I love doing this with peppers, red onions, sweet potato and carrots too. If you have leftovers (unlikely ) this makes a great tart on puff pastry on Boxing Day. |

Cut them in half lengthways and remove the centre if it's hard or woody.
Toss the blanched parsnips in flour, chilli and finely grated Parmesan cheese
Roast in the oven until crisp and gold coloured but don't let them burn

Ahead of time - peel, cut into long strips and boil in salted water for 5 mins. Drain and lay on a flat surface to cool then pop in the freezer. On Xmas day take them out and pop straight into the oven with some butter and honey - roast for 20-30 mins. Tried and tested (can do carrots alongside in the same way) |
