"As far as I'm concerned stovies have to be made with either leftover lamb (or even better, mutton) or leftover beef & dripping. Cooked long and slow and served sprinkled with pinhead oatmeal.
K"
Not too sure about the oatmeal, but must not be runny, definitely must sit as a heap on the plate.
Just need a suitable dessert to follow.... spotted dick? ( less emphasis on the spots btw!). |

I grew up with my mum using corned beef in ours.
But I've switched over to sausages and prefer them that way.
Like others have said its meant to be a leftover dish however, so it really should be whatever is left from the Sunday "roast".

"For us non scots...
Be kind enough to explain exactly what a stevie is....please"
Stovies - Mostly potatoes, a meat and gravy/stock all mashed up with some lumps left in it.
There is a Wikipedia article for it.

Stew, carrots and peas in stovies.
That’s, as you say, just a stew! |

Leftover beef usually a Sunday toast
Steak/roast/mince or sausages, it can also be a mix I find steak slice(square sausage ! Lorne is pork square) and some mince is a good combo
Potatoes makes up the lions share of the pot cooked with the meat so all the starch stays in the dish making it thick
Onions
Meat gravy
Salt and pepper
Regional variations can be some root veg usually carrots
Up north it’s always served with oatcakes and by far the best way mmmmm |

Traditionally stovies has always been made with the leftovers from Sunday lunch.
So in my group of friends you could always see who had a posher upbringing than those who did not. Beef and lamb for the posh ones sausages and square for us scummies lol
Still to this day make my with square, regardless of Sunday roast. |
