If he leaves Pence in charge he will pardon him. What will happen next?

Because Trump has gone legal on every attempt to get him in court, he has never actually been charged with anything (as POTUS). It must therefore follow that Pence won't actually be able to "Pardon" him because there is nothing to "Pardon" him for.

It should be a lot of fun over the next few years seeing Trump up in front of different judges

As far as I know, a VP can't pardon anybody. Trump would have to resign, handing the reigns over to Pence to do it. Trump would only do that if he thought there was a real possibility of being convicted of a federal offence. It's worth remembering a pardon wouldn't cover state offences such as tax fraud which the New York authorities want him for.

Regarding the fact he hasn't been convicted of anything he can be pardoned for, remember that Nixon was pardoned by Gerald Ford (Nixon's VP who took over after Nixon resigned) for all Watergate crimes before any charges were brought. That's why he wasn't charged.
