Find a nice set of pubs to visit (Ask people for their suggestions).
Use emails through this site for details of places, (don't put locations and times in the open forum).
Have a payg phone, a play phone, give people the number if you want.
If you want to all end up somewhere, i'm sure there are late night pubs, but if you get a private room, it will be dull and not much socialising (people will try to keep their options open) unless you have a few icebreakers in the form of games, quiz or dares etc.
If there is a cost involved, ask people to chip in...
This is what was done in the Llandudno one a while back (without the private rooms and games), worked fine, but only about a dozen people declared themselves (there were a few around without declaring, recognised some form their pics and other swinging type events...), and single blokes were limited for the obvious reasons...
