I just threw some chicken breast in the wok, egg noodles, spring onions and garlic and soy sauce plus spices.. dollop of butter too
And whatever veg your fridge hides. It was sweetcorn here for simplicity and kids taste buds. Takes no longer than 10 min. |

My homemade Shepherd's pie is orgasmic . Serves 4 .
800g Mince
Pinch Salt
1 Oxo Cube
Parsley
1 Sachet of Shepherd's Pie Mix
Dash of Worcestershire Sauce
1 Tin of Beans
1 Onion
All together in a Wok .
And obvs Mash on top with grated cheese , enjoy

Fried rice with eggs and spring onions
Pasta pesto spinach white wine and cream cheese

Ramen is delicious, light and nutritious. And ingredients aren't too hard to find for it.
I did a butternut squash, sage and roasted goat cheese risotto recently that was epic.
Even a panko breaded piece of salmon/tuna with some good tartare sauce in a roll can be a posh fish finger sarnie.
If you can get a whole chicken you can stretch it out for a couple of meals - first night hot roast chicken salad with baguettes if wanted, chicken and sweetcorn pie and then you have bones for a good stock. |

I made a beef stew with frozen casserole meat which no one wants, tinned tomatoes watered down with stock, and chorizo they were chucking out. Packet of frozen casserole veg. Huge pot, has lasted me ages, tastes really good.
I think ability to make a basic sauce (tomato or milk based) plus a knowledge of herbs etc that go well with various meats puts you in good stead. |

A stew pot adjust as required.
meat, steak, mince meat.
potatoes and stew veg in it.
I also tend to throw in peas, beans and spagheti.
Its a cheap meal, feeds many add chips and scallops.
can be frozen.

Those sandwich thins you can buy make excellent pizza bases for a quick 5 min snack/dinner.
Same goes for tortillas.
Tomato purée, cheese and whatever toppings & herbs. Quick 5 mins under the grill and you’re good to go. |

Sweet and sour chicken I tried recently was yum. Served with rice.
350 g chicken breast in strips or cubes
1 red pepper
1 carrot
1/4 pineapple
1 spoon of potato starch
2 tsp of fresh ginger
1 clove of garlic
1/4 glass of rice vinegar or lime juice
4 tbsp of demerara sugar
Pepper preferably white
Oil
3 tbsp of ketchup (I know!)
PRZYGOTOWANIE
Cut pepper in small cubes, carrot thin strips. Pineapple small pieces.. whatever shape you like.
Coat chicken in potato flour and salt and put aside. Great ginger and garlic or use frozen cubes or ready paste.
Mix vinegar with sugar and 3 tbsp of water, keep aside. Fry oil in work, add chicken, stir about 5 min . Add ginger garlic and pepper towards the end. Follow by pepper and carrots, stir another 3 min or so.. and then pineapple for further couple of min. Timings just for guidance..
Turn up the heat, pour the mixture of vinegar and sugar.. cook 2 more min , splash ketchup in, mix well and serve.

If you've got time
A leg of lamb. Piece the meat a few times and put in small amounts of crushed garlic. Then rub with rosemary
Put in slow pot cooker with 300ml of red wine and 400ml of lamb stock
cook on low for 4 hours. turn over, cook on low for another 4 hours
eat, orgasm, thank me later |

Also simple things like shakshuka.. baked eggs in tomato sauce with garlic.. chilli.. basil. I like them with chickpeas and kale.
On topic of kale.. quinoa or other nice grains with chorizo and kale too.
Or roasted curried chicken things with baby potatoes and pumpkin or squash/sweet potatoes and some kale coated in oil and salt which added in the end goes crispy.. and delicious.

Rice n Peas
Fry some onions and garlic until golden. Add chilliest to taste. Throw in a can of coconut milk and allow to bubble. Add a tin or two of kidney beans and some cold boiled rice. Heat through and season. Serve with fried chicken or veggie sausages. Also good cold. |
