Dal is my absolute default option. if it's cold outside, if there's some stock that needs using up, if we haven't had it for a couple of days. It comes in a thousand forms, but we live the classic red lentil with onion and garlic, and some all or many of bay leaf, cloves, cumin, turmeric, coriander, cinnamon or cardamom, and plenty of plain yogurt to turn it into something magical. Wonderful with roast veg, but perfect without.
And makes the most fabulous chapati dough (if you ever manage to leave any!)
And - proud moment - my darling sub has learnt to make it too |
