Today I Will Be Cooking......

Chicken Fajita Bake for my batch cook.

If you have a springform cake tin ideal for the wraps, I don't so slice the wraps to fit.

Fry Light

3 chicken breasts into thin strips

2/3 large peppers deseeded and slice thin

2 large onions slice thin

1 tbsp ground cumin

1/2 tbsp ground coriander

1 tsp chilli powder

1 500g carton passata

1 tin kidney beens in chilli sauce

2/3 WW wraps (depends if counting cals or not)

70g low fat mozzarella

40g low fat cheese

Spray a fraying pan, get the oven on at 200.

Cook the chicken for a few mins, then add the peppers, onions and spices, grind some salt and pepper if you want.

Stir it around so chicken is covered.

Put the kidney beans and passata in, simmer for 15 mins.

Once all cooked do a layer (if using the cake tin, line with baking parchment first) of chicken, wrap, chicken, wrap, chicken then top with the cheese.

25/30 mins later should be golden.

Eat.

I've already cooked my meal for the day bacon and egg sandwich but used a chaffle instead of bread.

Low carb is the future but I do miss bread lol

Me and the wife are trying to cut down on carbs but my Irish heritage and it’s love of spuds is making it hard.

Couldn’t go without dairy. Cheese is the ultimate food group

Recipe please!"

Roughly chop

2 carrots

2 sticks of celery

2 onions

800g of sweet potatoes

2 cloves of garlic

200g of chorizo the cooking variety.

Heat a little olive oil in a saucepan add all the above ingredients with 3 teaspoons of dried herbs and 1 tablespoon of curry powder leave to cook for 10 min.

Then add 1.8L of water and 2 chicken stock cubes and cook until the sweet potato is soft, let it cool a little then blend.
