I imagine most of the supermarkets will have loads left over from Christmas. You could try a peanut oil/duck or goose fat mix? |

It's gotta be lard, but when you've chopped yer chips, rinse them in cold water to get rid of the starch, then dry them to prevent spitting before you put 'em in the chip pan

I run a restaraunt in London’s west end
Any fat in a pan has a shelf life
Heat up cool down heat up cool down it will degrade
You get fine particles in the oil it degrades
You have to change your oil regular
If you only cook chips in it it will last longer |

Any animal based fat is exactly that animal based it will go off
If you use beef dripping and veg lard providing your pans covered and you only doing chips should last 6-7 weeks then change |

I'm a little confused as to why anyone would take the risk of using a chip pan on a gas hob anyway when it's kinda dangerous and also gas is so expensive. Electric fryer with a thermostat is so much easier! |
