Not melted though, the toast needs to be cool enough and the butter cold enough so that it stays on top

Amateur. If you keep applying enough butter you’ll cool it enough to have saturated the toast and still have an unmelted coating

I have coeliac too, the Genius toastie loaf makes really nice toast! It's a good texture, never full of holes or falling apart, and not too dry. It's the tastiest GF bread I've found, I recommend you try it if you haven't already, I sorely missed toast before I discovered it.
