I'm doing a roast and was wondering how you lot roast your turkeys? Any tips tricks or procedures I should be following? I have my own methods of course but it always good to learn new stuff. Give me the low down

I do this every year - love it. And love how it all looks with the star anise, and all spice berries with oranges and root veg. Turkey gets so moist and juicy. The only difference is, I actually transfer some of the brine in the roasting dish, and cook on low for longer. And I stuff it with an middle eastern inspired stuffing (minced beef, a cooking apple, onions, lots of different dried fruits - fry and let cool before you stuff).

Delicious.

Think Gavin and Stacey endorsed that method by Nigella. Can't stand all that pouting and innuendo though.

I boil the ham then roast it but low temp, longer cooking seems to work for me

Butter under the skin, and lemons up it's bum

You feel a bit pervy massaging the butter in tbh but it doesn't dry the meat, cover in foil and cook.

For your roasties, part boil then fluff up with salt and add to smoking hot fat pan! Best roasties ever!
