Formula One brunch

It's the penultimate Formula One weekend of 2019 with tomorrow's Brazilian race taking place in São Paulo.

I normally enjoy a 'breakfast brunch' when the race is on, with a splash of ketchup and brown sauce.

The problem is that my most recent reduced sugar brown sauce purchase is insipid to the point of being a waste of plate space.

So, this afternoon I intend to create and cook my own version of HP sauce.

I'll be providing samples later on this week.

HAs anyone else made their own ketchup, brown or other sauce?

I'm thinking (without looking at the bottle) of a base of onion, apple, garlic and dates with tamarind and tomato pastes.

I'll add cider vinegar, lime and orange juices to cut the sweetness and add acidity.

Spicing; a fresh finger chili, a little cinnamon, cayenne pepper, mustard powder, smoked hot paprika powder and, possibly, a little Worcestershire sauce.

Finish with a little salt and possible muscovado sugar (I think the dates will, however, take care of the sweetness).

I make my own barbecue sauces as anything shop purchased always seems to have sugar as the main ingredient and I like slow cooking a brisket or pork shoulder with a decent sauce.

If the brown sauce works out then next weeks task is to get hold of some decent mangoes and make a batch of mango chili chutney (without all of the sugar).

Sorry to but In but I don’t even like brown sauce but they way you describe it and the words you use/ ingredients sounds fantastic hahha I’m hungry now for like some smokey bbq type sauce haha

Cooking is something that I really enjoy. It's creative, sometimes extremely technical and I get to share it with friends.

I use liquid smoke when making barbecue sauce (available from Amazon etc.) and have a Bradley smoker and a smoke gun for non-sauce items e.g. meats, fish, cheese, nuts.

If you like roast chicken, then barbecue chicken will beat it, and a smoked whole chicken will trump that as the flesh retains almost all of its moisture.
