Mix eggs with a little milk and salt and pepper. Melt some butter in a pan. Pour in the egg mixture and stir continuously. I use a fork or a balloon whisk. Keep the heat low and the eggs moving. Remove from heat the minute it begins to look like scrambling and continue stirring. Don't overcook!
