"I don’t like pork "

I’m sceptical but the family likes it so I’m making it today and I’ve never made roast pork only slow cooked and shredded. I prefer chicken or beef.

In a glass dish with a little water for half cook time and then cut off the fat for making separate crackling. Back in the oven with the side you took the top off facing the top. Whilst it finishes cooking grab 2 baking trays. Slice the fat into strips, put on 1 baking tray, sprinkle with salt and cover with the other baking tray. Put in hot oven and keep turning over, removing fat and adding a little salt every 10 mins or so until crispy. Use the water from the pork as a base for your gravy. Lovely.

Works with beef too. My new profile photo came out of the oven 10 minutes ago. Lovely.
