"It needs to be dry, so pat it well down before trying to cook.
Your best bet is to brown it off and sear it in a frying pan before roasting "

I cook the duck as per instructions in the oven then take out at the required time and use a sharp knife to remove the ( not crispy skin ) then on tin foil put the skin only back in the oven for 5 mins
Take out - perfect |
