Brown some pork loin chops, put in a casserole dish with a tin of ratatouille over the top and bang in the oven for half hour.

Add a jacket potato

Me too - either a chilli or bolognese or some variation - then just heat up and add carbs, veg etc ..

Or something like a crustless quiche. Eggs, milk and/or cream, vegetables and/or meat mixed in, spices etc, oven. Can be reheated or eaten cold.
