I make it all the time, but can’t be bothered with curds, so just use grated cheddar.

Also can make Rancher’s Poutine, where you add in some ground beef. That one’s better if you use Red Leicester or a tart coastal cheddar, and make your gravy with an oxo cube for extra saltiness.
