Does anyone have any decent game recipes?

I will soon have an abundance of Pheasant, Partridge, Duck and Venison....

Pheasant is nice tandoori style as you cook quick in a hot oven (works well with rabbit too as keeps moisture in)

No need to pluck, just strip out breast meat, cut into strips about 2cm wide and then marinade overnight in either of the below two mixes:

Mix 1.

6tbsp sunflower oil

290ml yoghurt

4 cloves garlic

1 red chilli chopped

Juice of 2 lemons

4tsp turmeric

4tsp cumin

4tsp coriander

1tsp cinnamon

2tsp paprika

Mix 2.

Thumb size piece ginger

2 garlic cloves

2 cardamom pods

Coarse salt

(Crush all the above into a paste using mortar & pestle before adding to all below ingredients)

2tbsp fresh coriander chopped

1tsp turmeric

1/2 tsp garam masala

1/4 tsp chilli flakes

200ml yoghurt

Juice of 1 lime

After marinading, place pieces of pheasant onto baking tray and cook in hot oven for about 15-20mins Turn once during cooking.

I like to eat them kebab style in a hot pitta with salad/tomatoes/raita
