I'm wanting to make a rack out of wood for a few empty spirit bottles.

I'm looking for a dark wood with the rings showing.

What wood would be best to use

Please consider I am a novice at this

Pine and burnish it; a very cheap option so it doesn’t cost the earth to have a few attempts. Pine is very easy to work with too for a beginner.

Burnishing is fun too. You scorch the surface using a blow torch and all the swirls and rings stand out clearly. If you overdo it you can sand it down a bit.
