What's wrong with a bit on the side?

I do love a good dip, sometimes I like to double dip.
But enough about me, what's your favourite sauce of choice to slather over your chips, or do you put it on the side of the plate, maybe you're a bit posh and use a small pot for the sauce.

Depends on my mood and the type of chip!
Skinny fries only deserve ketchup really, as they're pretty bland and tasteless otherwise....
but a thick homecut chip that's fluffy in the middle, golden on the outside, and simply bursting with flavour... That's something that would be sinful to drown in ketchup... They should be accompanied by more subtle, complimentary flavours, like a light garlic mayonnaise, a marie rose, tartar or hoisin sauce, a mild satay or curry, or even a sweet red onion marmalade. But nothing is better to dip your chips into than the juices flowing from a nice big sizzling steak  |

Always used to be ketchup that I'd slather over anything - these days though more often than not it's mayo for something like chips or an otherwise "dry" dish...fish and chips is tartare sauce - both usually squirted on the side of the plate for dipping.
Roast dinner or similar gravy all over is the preference |
