No offence but as a proud Yorkshire man I pretty much have batter running through my veins...... Eurrgh

The main points are

Well mixed batter (not fussed about letting it stand)

Smoking hot oil in your trays.

Never ever EVER open door midway through.

High quality eggs make all the difference
