My Jamaican Grandma's recipes ...
The hot pepper sauce has soursop and lime added, great flavour.
The chilli jams have like a traffic light system, as I separate the coloured chillies green, orange and red... Different flavours and heat strengths.. |

Not with how I've made mine... And scotch bonnets are a fruiter chilli too.
The ratio of green chillies (fully de-seeded) to bell peppers, sugar and cider vinegar makes my green one the mildest of my trio. |

Hadn't had salad cream in years but gone back to having cheese, tomato and salad cream sandwiches- a taste of my childhood - and remembering how good it is. |

My mate used to have a greenhouse where he grew many varieties of chillies and peppers, there was nothing on the scoville scale that you could't teach him  |
