A UPS man just came to my door and hand delivered a jar of your superb home-made marmalade!
It's so nice of you to have sent me some.
Not only do I have a tangy refreshing sunny spread for my toast each morning, but a sunshiney smile spread on my face too as I am reminded of your thoughtfulness with each spoonful.

I had commented earlier this week on a forum post that my marmalade always turned out runny. Testarossa said she would send me some of hers to try. It is yummy and not at all runny. |

Mine was runny last year, as were a few other peoples, so I think the oranges were a bit low on pectin. I might have over boiled this year because its set pretty solid but tastes lovely! |

Just for you a 'chef mike' receipt.
Prep time
5-10 mins
Cook Time
30 mins
Servings
3-4 450gm jars
Ingredients
About 8 medium sized VALENCIA oranges (pipless, juicy, thin skinned)
l Grapefruit
l Lemon
Less than a bag of sugar (about l.5 lbs) - Judge as you add
Directions
Wipe over the fruit, well. Cut into quarters, removing any pips. Pulverize in Food Processor until rind is quite fine. Place in microwavable bowl and "nuke" on high for 10-12 mins until boiling. Remove. Stir in your sugar, and nuke on high for about 18-20 mins until thickened (stirring occasionally).
Use pyrex jug to pour into HOT STERILIZED JARS. Apply wax paper jamming circles immediately.Cool to cold and then place plastic covers with rubber bands round.

Just for you (again) another 'chef mike' receipt.
This simple jam can be made entirely in the microwave and is a great way to preserve fresh summer berries when they are cheap and in plentiful supply.
Ingredients
500 g strawberries or raspberries
50 ml lemon juice
500 g jam sugar
Preparation method
Prep: 1 min |Cook: 20 mins
1. Put the strawberries in a large, microwaveable bowl with the lemon juice. Cook on full power for 4 minutes, or until the fruit is soft.
2. Stir in the sugar and when completely dissolved, cook for 15–20 minutes, stirring every 3 minutes.
3. To test when the jam is ready, after 15 minutes, spoon a little jam onto a chilled saucer, cool for a few seconds then push a finger across it. If the surface wrinkles, it has reached setting point, if not, cook the jam for a further 3 minutes, then test again. Continue testing every 3 minutes until setting point is reached.
4. Stand for 5 minutes, then pour into warm sterilised jars, seal and label.
*Cooking time will vary depending on the power of the microwave and ripeness of the fruit.
*Jam sugar contains a balanced amount of natural pectin and citric acid, which overcomes the problem of setting encountered with some fruits, like strawberries with low pectin levels. You can therefore be sure of a perfect set.
Phew! I'm off to have a restful cup of chai tea now. |

After struggling back from the shop (nearly got my car stuck in the snow!)I have just had crumpets with butter and yep, you guessed it... Seville Orange Marmalade! |
