What is your fail safe dish that you do knowing it will always turn out really well.

Mine is slow cooked pulled pork.

My dish is Saltimbocca alla Romana,

Thin escalopes of veal topped with a sage leaf and a piece of Parma ham, fry in butter, remove from pan add a big glass of marsala wine, bit more butter and hey presto!

Impresses everybody that's ever had it!!

I make an amazing cheese on toast. It has to be tasted to be believed.

Also make a cracking chicken noodle and sweet corn soup. Takes ages to make though as you have to boil down the chicken carcass.
