The question is, what's your signature dish that you would cook for them to show off your culinary skills ?

I don't have a signature dish however, I've had compliments on the following:
Paella - by my Spanish gf at the time.
Linguine with prawns/cod - by my Italian colleagues.
Sunday roast - by everyone
A weird vegan dish that is basically tofu, coconut milk, lemon grass, sweet peppers, chili, lime, onion, and rice/noodles, which a mixed bunch of people liked.
Baked sea bass/mackerel with tagliatelle and tomato,onion and herb sauce went down well with a few girls I've wined and dined. |

Pick the hardest to make why don't you, I'm not even sure if the paella pan works on the new cooker

I love Almonds so I'll take the Tarte please. You can substitute the paella pan for a frying pan; it'll still work.
