Favourite dish

So I’m learning new dishes for work. So far I’ve made a banging chicken and mushroom pie (even made the pastry, go me!), soups I’m getting to grips with and tonight I had a stab at making my own chicken Kiev (for my own personal gain as I love them!).

What’s your favourite dish? If you go out to dinner what’s your go to dish? Looking for ideas, be creative!

Anything to do with spices or chillies.... Chicken vindaloos and fal curries with ghost peppers, Carolina reapers or anything hotter.

We do brilliant curries here already. We don’t have it on the menu all the time but toying with the idea of making a day specifically for curry night, so might look into different ones.

Cajun pheasant or Cajun Pigeon, lovely and healthy........well apart from the pot of double cream that I add............a good all year round recipe that utilises extremely free range meats

A beef bourguinion or perhaps a beef wellington.

If you do a chilli make sure you add loads of cumin and balance that flavour with a couple of squares of 80% cocoa dark chocolate.

Noooo! I can’t do pheasant!! We have one that wanders round the grounds we’ve named Charlie, I couldn’t bear to think of him on a plate!!

We have regular good old fish and chips covered in batter but I would like to work with more fish (much to doughnuts distaste!) I do love a good fish dish. I think it would go down well here.

Thai green curry,

Chilli,

Chorizo stuffed chicken breast with celeriac mash.

But my favourite to make are deserts, I make an awesome toffee apple pie

My fab dish is definitely Steak... Preferably ribeye....

Whatever comes with it... The usual of chips and a few peas etc.... But also I love it with a big old dollop of mash, garlic or mustard mash mainly!!

Not overly inventive... But I likes it!!

Apparently we can’t have steak here, although we were told we can’t have a lot here when we started and that changed very quickly! We want to put a mixed grill on eventually x

I have to google chicken parmo, never heard of that one.

Ramen! Absolutely love ramen. That being said...

Try and stick to seasonal produce and seasonal dishes as much as possible, I think food tastes better that way. Moules marinière with homemade bread and pommes frites. Cara_elised spring onion and goats cheese risotto but for the love of all, cook a decent risotto - do a proper base, use decent stock etc.

You could also look at doing sharing plates, my friends and I love ordering that sort of thing Like a whole roast chicken with various sides. I think it's called family style dining? Also, cheese dishes. I'll always order at least one.

Noooo! I can’t do pheasant!! We have one that wanders round the grounds we’ve named Charlie, I couldn’t bear to think of him on a plate!! "

Try wood pigeon then, must be cooked quickly on a very high heat to seal it and keep it juicy, it’s just like a nice piece of steak.

I make some really good spicy beef koftas with a cheese and chilli filling.

Also a really good roast Veg and chorizo soup

Ginger and lime baby squid with a lamb's lettuce and pomegranate salad.

Kangaroo loin in honey and sumac

Molasses and tamarind chicken

Great side dish of honey roast squash
