Sponge Cakes

Was making some of these at work yesterday and was wondering whats everyone's favourite and what is your prefered method making them.

Now, I can make the mix either the creaming method or the batter method, but what about everyone else?

Do you prefer creaming it or battering it?

And what kind of sponge, a nice moist one or the flaky kind?

Do you like them baked or steamed

For me a good banana bread or lemon drizzle, with a nice moist sponge and textured outside.

Though I do love bakewells but they are really a tart!

I make cakes a lot for people so a bit bored with sponge.

As for method, has to be tye creaming method...

I like to eat carrot cakes, I believe it counts towards your 5 a day.

Fresh cream victoria sponge is the best , strawberry jam and i always put a tiny bit more sugar in the cake mix than it says
