Dinner party

I'm hosting a dinner party tonight, with me 5 good friends. What you you suggest is on my menu ? - I've got 3 vegetarians coming - i'm hitting the shops in an hour or so.

Do the veggies eat fish?

If they do, make a fish pie?

Otherwise, try a roast vegetable risotto, or mushroom risotto.

For a starter, a lightly dressed salad with quail egges (halved), cherry tomatoes (halved), and fried lardons (leave out for the veggies).

Shop-bought dessert, or make Eton Mess by breaking up some shop-bought meringue, mix with whipped cream, add some defrosted mixed soft fruit, and drizzle with some shop-bought raspberry sauce/coulis.

My tip :

Read a recipe. The internet is full of them.

My Menu ideas.

Start with soup or savoury cakes ( no fish )

Main a hearty broth with pulses n beans.

It's a main for the veggies with decent crusty bread but give a smaller portion to the carnivores ( normal people ) to accompany some meat you have slow cooked in the oven with it ( in another dish )

The above saves cooking while you have guests. It does itself.

Dessert..... Well it's bloody freezing out there. Simple crumble apple or any fruit. Do them separate. A hot fruit puree and only spoon the crumbly crust on top of those who don't whine about butter being an animal derivative.

Serve with a simple vanilla custard.

Or with a soya alternative for the pain in the arse veggie people.

Wine that hasn't been stirred with a pigs foot.

Kiss everyone tata and tell the veggies to bring their own food next time.

In fact tell them all to anyway.

Buy the most expensive risotto rice you can afford, (Gallo do some nice stuff) and don't skimp on quality stock, wine and butter.

And do it slowly - you can ruin a risotto by adding too much stock too soon...

Eton Mess is one of my fave desserts but the trick is not to mix the meringue and the whipped cream together until just before you serve it otherwise the cream dissolved the meringue and you end up with a big pile of gloop. Drizzle the finished mess with blackcurrent coulis and you've got heaven in a dessert bowl.

A chef friend told me treat risotto as you would a lover...care ,attention and constant stimulation
