For you chefs out there, I need ideas for a good menu. I have a guest coming for dinner, I don’t want to spend a fortune on food, no red meat and they only like basic veg and food.

I don’t want to be in the kitchen for hours and no takeaways either.

Any ideas please?

Why not make a chicken curry and rice? Or a Dahl is super easy to make, with some sides...keep it old incase they don't like strong spices? Or marinate some chicken, make a colourful salad and warm some pitas and make a nice easy kebab?

Southern fried chicken wraps. Slice tomatoes, cucumber, lettuce, Southern fried chicken breasts, peppers, onions. Bowls of sour cream, salsa and guacamole. If everything is in individual bowls they can pick what they want to put in their wrap. Really quick, half hour, tops. Omit anything you /they don't like and change to regular breaded/coated chicken breasts or plain if you don't want Southern fried. Xx

Very welcome, it's one of my simple dinners, you could also substitute quorn fillets or even veggie burgers. Xx

Do some spicy wedges to go with them...Olive oil, couple cloves crushed garlic, sprinkle of mixed herbs, chili powder and salt and pepper. Beats anything from the freezer.
